Paletas can also be multi-layered with a cream layer mixed with an inner water-based fruit layer as in the case of the Fresas con Crema in which an ice cream outer layer envelopes a tangy strawberry puree based interior.  The Cajito Membrillo features a drizzle of guava past atop a caramel cream base.  The Mango with Chili blends tangy chunks of frozen mango with portions of spiciness.  The resulting combination of tanginess and spiciness is surprisingly refreshing and is definitely one of the highlights of the paletas.  On a side note, ripe mangos are often sliced and served whole on a stick with a dousing of chili powder.  The frozen rendition of the street side treat keeps many of the fine qualities of the original and adds the refreshing coolness of ice.

La Paletera also offers a selection of ice creams in both traditional American flavors like pistachio and chocolate and more unique flavors like margarita.  The ice creams are available with in several varieties and can also be combined with fruit cups and snow cones.

The Escamocha combines slices of mango, cantalope, pineapple, coconut, strawberry and watermelon with a yogurt, honey and granola topping.  Essentially a meal in a cup, the Escamocha combines three of the major food groups into one.  Think of the yogurt parfait from McDonalds, but with fresh instead of frozen fruit.  The mangos work well with the creaminess of the yogurt while the crunchiness of the fresh coconut lends a butteriness to the combination.  The watermelon chunks near the bottom of the cup help to bring a refreshing end to the selection.
