Bamboo is a vegetable that is often used in many Asian dishes.  From stir-frys to savory-sweet cookies, the versatility of the bamboo shoot is truly amazing.  Bamboo shoots in various cuts with some vaguely resembling pasta can be seen in the trays.  The thinner chopped portions can be used in stir-fried dishes whereas thick chunks are better utilized in stews.  Texture-wise, the bamboo is a cross between a watercress and fresh yellow squash.  The red translucent strands are spiced jellyfish which is often dried and shredded for use in salads.  While the jellyfish itself has little flavor, it exhibits an interesting texture that is not unlike crunchy tapioca.  Processed jellyfish has an ability pick up the flavors of the seasoning and makes a nutritous and tasty addition to salads.  Farther down the row are wheat gluten strips and fresh tofu.  Wheat gluten is often used as a meat substitute for vegetarians and is amazingly versatile in its utility.  Gluten has a chewier texture than tofu, but like tofu can form the foundation of a flavorful and healthy dish.

It doesn't get fresher than live.  MT Supermarket features by far the largest seafood section of any supermarket in Austin.  The clams above are in a pool of constantly refreshed water that not only keeps them cool, but also allows the water to be as fresh as possible.

Tilapia are originally from Africa, but have been increasing in popularity in recent years due to their high protein and low fat.  One of the healthiest fish for a low cholesterol diet, Tilapia can often be found live in Asian supermarkets and restaurants.  My Thanh is no exception offering Tilapia in various sizes with tanks placed above one another.
