A unique twist on the fare of the evening seems to be the wrap that features a tuna stir fry surrounded by a golden crepe and drizzled with a savory-sweet hoisen blend sauce. The result is meaty, yet light with the sauce adding a sweetness to the mix.

The mix of savory and sweet extends to our final dish of the evening. Thinly sliced, lightly seared tuna is folded alongside a lime sorbet and set on a crispy wonton skin. Several types of microgreens add both color and flavor accents to the fish. The lime sorbet lends a cooling sweet tartness that not only enhances the flavor of the tuna, but also aids in blending the textures of the tuna and the wonton skin.
Overall, the Stars Across Texas provides a nice overview at the cuisine available in the region. The incumbent restaurants both disappoint and delight while the new entrants prove their potential. The evening also provides unique insight into the relationship between restauranteurs and critics and teaches us to take everything we hear with a grain of salt.
