One of the newest upscale entrants in Austin is Finn and Porter.  Located in the Downtown Hilton, Finn and Porter blends an interesting combination of Seafood, Steak and Japanese cuisine.  Since the Stars Across Texas event is located at the Downtown Hilton, Finn and Porter have little to do other than go up a few stories.  As such, they not only have one of the largest booths at the event, but also more items on tap than most of the other restaurants..

The first dish is cleverly devised in which the serving utensil is also edible.  The spoon is made of a light cracker that is coated with black and white sesame seeds.  In the bowl of the spoon is a combination of caviar, tuna and a medley of herbs that is topped off by a dollop of sour cream.  The delightful texture of the crunchy and soft elements help to set the stage for the rich, sweet and savory flavors.

The second dish continues the seafood related theme.  The seared tuna slices are lightly carmelized on the outside while retaining the delicate texture within.  They are accentuated by the savoriness of the sauteed meat, onion and herb accompaniment.  The sauce brings a nice sweetness to the dish that helps to balance the flavors of the tuna with the savoriness of the meat.

The final dish from Finn and Porter features a sliver of tuna that has been glazed with a savory sweet sauce.  The combination is set atop a crispy, salty rye crouton.  The effect is interesting in that the crispness of the underlying layer causes one to be more acutely aware of the contrast that the tuna brings to the entree.
